Lane’s 24-hour Diner

Always available:

Mexican Tacos: your choice of ground beef, chicken, shrimp, smoked pork, or beef steak (or a combo of more than one) …. seasoned with cumin, coriander, garlic, onion, and chili powder, nestled in soft flour tortillas and topped with refried beans, onions, bell peppers, tomatoes, olives and shredded cheddar cheese. Don’t forget the hotsauce!

Italian Tacos: Homemade Italian Sausage, nestled in soft flour tortillas and topped with tomatoes, onion, bell peppers, sliced pepperoncinis, black olives, and shredded Italian cheeses. Alfredo sauce optional.

Mexican Nachos: A layer of crispy and spicy soy-flax chips, topped with your choice of seasoned ground beef, chicken, shrimp, smoked pork, or steak chunks (or a combo) … added to refried beans, onions, bell peppers, tomatoes, olives, and sliced jalapenos, then buried in a mound of melted cheddar cheese. Goes well with any hotsauce!

Italian Nachos: A layer of crispy and spicy soy-flax chips, topped with Italian sausage, tomatoes, onion, bell peppers, sliced pepperoncinis, black olives, and shredded Italian cheeses. Alfredo sauce optional.

Chicken Quesadillas

Quesadillas: Your choice of ground beef, chicken, shrimp, smoked pork, or steak chunks (or a combo) … grilled and then folded with green chilies and cheese inside of garlic-grilled low-carb flour tortillas.

Enchiladas: Your choice of ground beef, chicken, shrimp, smoked pork, or steak chunks (or a combo) … wrapped inside low-carb flour tortillas with grilled peppers and onions, then topped with your choice of homemade enchilada (pepper-based), verde (tomatillo and lime), crema (sour cream sauce), or tomato-pepper sauce and cheese, then baked till hot and bubbly.

Grilled Corned Beef Sandwiches: Corn beef, sauerkraut, caraway seeds, homemade Sugar-free 1000 Island Dressing, and swiss cheese … grilled on buttery, garlicky bread.

Beef Stroganoff: Your choice of ground beef or steak chunks, cooked with egg noodles, onions and peppers in a sour cream and mushroom sauce.

Canned Gyro Meat: Don’t let the canned part scare you! Lane’s canned gyro meat is rockin! … AND it’s only 10 minutes from safely pressure-canned containment vessel to being grilled and on our plate, pita, or wrap … all slathered in tsziki sauce, made from Lane’s own homemade greek yogurt and the dried mint in the pantry. It’s amazingly good!

French Onion Soup: Rich beef broth jam packed with caramelized onions, topped with crusty bread and cheese … then toasted brown in the oven.

Lane’s Famous Potato Soup: Big chunks of potato cooked with bacon, celery, onions, and peppers, and then smothered in a thick, creamy stock. Topped with shredded cheese, bacon bits and/or sour cream, your preference.

Cheesy Potato Soup: Just like Lane’s Famous Potato Soup, but with lots of added cheesy goodness added in.

Ham and Bean Soup: Creamy great northern and/or navy beans, slow-cooked with onions, peppers, celery and bacon. Don’t forget the fresh-cracked black pepper.

Chili: Beef chunks, big hunks of straw mushrooms, celery, onions, bell peppers, and tomatoes … slow-cooked with lots of red beans, cumin, coriander, garlic and chili powder.

Chicken Stew: White meat chicken, slow-cooked with peas, carrots, onions, mushrooms, peppers, and barley.

Sausage Stew: Grilled rounds of beef sausage, combined with potatoes, carrots, and onions, all in a rich tomato sauce.

Beef-Barley Soup: Chunks of lean beef slow-cooked with carrots, garden peas, corn, green beans, onions, peppers, tomatoes, and barley.

Grilled Cheese: Crusty, garlicky, buttery bread with melted cheese in between. How much more zen can you get? Cheese selection depends on availability, but there is ALWAYS cheese available.

Burritos: Flour tortillas, stuffed with roasted red peppers, onions, cheese, and your choice of ground beef, chicken, steak chunks, smoked pork, or shrimp.

Tostados: Flat crispy corn tortillas, topped with refried beans, onions, olives, tomatoes, peppers, and your choice of ground beef, chicken, shrimp, smoked pork, or steak chunks (or a combo). Don’t forget the hot sauce!

Stir-fry Du Jour!: A truly versatile dish! Your choice of chicken, shrimp, smoked pork, or steak chunks (or a combo), stir-fried with peppers, onions, celery, mushrooms, water chestnuts, bamboo shoots, and anything else I happen to find in the fridge right at that moment! Potential sauces include: Thai sweet chile, peanut, traditional meat-flavor gravy, black pepper, or orange.

“Less rice/more stuff” Fried Rice: Your choice of chicken, shrimp, pork, or steak chunks (or–more likely–a combo) grilled with lots of peppers and onions, and then stir-fried with just a little bit of long-grain basmatti rice. A diabetic’s delight! “Thai Basil-flavored Less rice/more stuff” Fried Rice available with advance notice!

Mini-pizza Delights: Low-carb tortillas … topped with olive oil, pesto (when available) or pizza sauce … with your choice of ground beef, chicken, shrimp, bacon bits, ham, pepperoni and canadian bacon (when available), or steak chunks … or a combo of those meats … dressed with peppers, onions, and olives … and topped with a metric ton of cheese. Baked to a bubbly delight. Served with a knife, fork, and bib.

No-Crust Pizza: All of your favorite pizza toppings! Your choice of ground beef, chicken, shrimp, bacon bits, ham, pepperoni, canadian bacon (when available), steak chunks, peppers, onions, olives, pepperoncini, jalapenos, tomatoes, and anything else I might have in the pantry that day … all topped with a metric ton of cheese and baked to bubbly.

Spaghetti: Steaming heaps of pasta topped with Lane’s Famous Spaghetti Sauce, a yummy medley of ground beef, onions, celery, peppers, mushrooms, and Italian spices. Topped with lots of parmesan cheese.

Chicken Spaghetti: A twist on the classic! Oven-fried chicken breasts are rough chopped, then combined with pasta, a rich tomato sauce, and lots of parmesan cheese. Extra napkins included!

Chicken Parmesan: Juicy chicken breasts … oven fried, combined with a light tomato-garlic-basil sauce and lots of cheese, then baked to a golden brown. Also available (with prior notice) as Eggplant Parmesan.

Bagel Burgers: A Knox Family tradition! Thin, tasty burgers broiled right on top of bagel halves. Top them with your favorite burger add-ons!

Knox Burgers: A Classic. Big, thick garlic-spiked burgers, stuffed with onions and bacon bits, and topped with cheese. Try them low-carb: no bun! Just a napkin to keep the juices from running down your chin.

BBQ Sandwiches: Your choice of ground beef, chicken, shrimp, smoked pork, or steak chunks (or a combo), slathered with Johnny Harris BBQ Sauce (your choice of regular red or golden mustard) and piled on a bun or toast. Cheese, raw onions and/or pickles on request.

Chicken/Tuna/Ham/Shrimp/Potato Salad: A five-plex of cold deli salads: all featuring mayo, onions, and homemade sugar-free pepper or pear relish. Potential extras include walnuts, pine nuts, chopped apples, raisins, celery, cranberries, and more. Mix and match for a cool summer treat.

Sloppy Joes: That classic American favorite, made Knox-style! Features ground beef, chopped onions, BBQ sauce (or ketchup) and mustard. Try it with a few forkfuls of homemade sugar-free pepper or pear relish thrown in, just to add that surprising hint of sweet in an otherwise savory treat. Served on a bun or toast, with cheese.

Chicken Fingers: Crispy brown and oven-fried, our chicken fingers are da bomb! Served with your choice of Thai sweet chili sauce, honey mustard, BBQ sauce, ranch dressing, or mango-habenero sauce.

Steak Fingers: WOW! Crispy and tender and savory and just absolutely WOW! Lane’s Steak Fingers make an awesome dinner, and then great sandwiches leftover the next day.  Be sure to try the horseradish-mustard dipping sauce, or have your steak fingers with Thai sweet chili sauce, honey mustard, BBQ sauce, ranch dressing, or mango-habenero sauce. Or just plain ketchup. Your choice :)

Italian Sausage with Peppers, Onions, and Mushrooms: Wrapped in a tortilla or just eaten with a fork, Lane’s homemade Italian sausage links are awesome fried up with onions, pepper strips and fat, juicy mushrooms. Available with a bit of tomato or a ton of cheese, on request.

Lasagna: Lane’s low-carb version of the classic Italian treat. Low-carb flour tortillas replace the traditional pasta sheets, layered with Lane’s home-canned spaghetti sauce and lots of mozzarella cheese. In season, fresh basil will be spotlighted.

Grilled Chicken Cordon Bleu: A diabetic’s delight! A juicy grilled chicken breast, topped with a smear of whole grain mustard and a slice of deli ham, with a slice of swiss cheese melted across the top. Eat it in a toasted whole-wheat sandwich, or just ask for a fork!

Toasted Bacon, Cheese and Tomato Sandwiches: Timothy’s not much on lettuce, but he’ll always take a slice of cheese instead. Our BCTs are quick to make using the bacon we can and make ourselves (see buckboard bacon), and you can make them extra-special by requesting the garlic-grilled bread.

Chicken/Turkey Noodle Soup: Quick and easy, made from our own slow-cooked, pressure-canned poultry stocks. Great any time, but especially during cold and allergy season. Try the Poultry and Veggie version, with lots of celery, onions, peppers, peas, carrots, and mushrooms … or request the classic Poultry and Noodle version: just lots of hot broth, tender meat and fresh-cooked noodles, sure to soothe the sorest throat.

Fried-onion-coated Oven-fried Chicken Breasts: A Favorite! Boneless/skinless chicken breasts, dipped in ranch dressing, and encrusted with canned French Fried Onions. Bake till golden. Be sure to ask for your complimentary drool bucket :)

Durkee French-fried onions <–one of the few pre-prepared things I keep in my pantry. You can’t duplicate that taste in any other way … and they’re versatile, too.

Green Bean Casserole Delux: Be prepared to drool. I take the classic Green Bean Casserole recipe … and double the amount of onions the normal recipe calls for. I make it with whipping cream instead of milk, and then I add a bunch of bacon bits. This would taste good on a bumper. Even a dirty bumper.

Homemade Breakfast Sausage: We make our own sausage here at home, and our breakfast sausage can’t be beat! Lean and flavorful, this makes a great side for breakfast, a different but yummy burger, or an excellent filler for one of Lane’s Homemade English Muffins!

Canned Bacon for Breakfast or Sandwiches: Always available at Lane’s24-Hour Diner! Our canned bacon cooks up quick and crispy. Use it as a breakfast side, a sandwich add-on, or as a sandwich itself. It’s ALWAYS available.

Homemade English Muffins: One of the best things on this menu! Lane makes her English muffins from scratch. They start with a soft yeast dough made from fresh-ground whole wheat flour and home-rendered fat … and finish up as a soft, steaming, flavorful muffin that will make you never want one of those hard things out of a grocery store … ever again.  Try your English Muffin with Lane’s Homemade Breakfast Sausage, Canned Bacon, eggs, a simple smear of butter, or one of Lane’s wide variety of homemade sugar-free or no-sugar-added jellies, jams, and preserves.

Pancakes: A favorite everywhere, but especially here! Daily varieties include buttermilk, blueberry, walnut, chocolate chip, whole wheat, and banana nut … with more coming every day. Be sure to ask for either Lane’s Homemade Breakfast Sausage or Canned Bacon (or–gasp!–maybe even some Homemade Italian Sausage or Canned Gyro Meat) for a salty yummy add-on.

French Toast: The classic bread dipped in egg, then fried dish, made special every day in Lane’s kitchen. Be sure to request either the plain or vanilla-cinnamon versions. See Pancakes for recommended meat add-ons.

Biscuits: Any time you want them! Plain, buttered, cheese, ham, bacon, sausage, you pick!

Fresh Scones: Another specialty here at Lane’s 24-Hour Diner! Made Fresh to order! Your scone choices include one or more of the following: dried blueberries, cherries, cranberries, figs, apricots, peaches, and pineapple; crystallized ginger, dried orange peel, candied orange peel, and candied tangerine peel; English walnuts, almonds, pecans, hazelnuts, or black walnuts; chocolate chips (regular and sugar-free), white chocolate chips, butterscotch chips, and toffee chips; various spices and flavorings. If you don’t see what you want, just ask!

Grilled Bacon-wrapped/Cheese and Cumin-stuffed Anaheim Peppers: Does that actually need any other description? :)

Super Supper Salad: We start with fresh spinach leaves, and unload the fridge and pantry from there! Bell peppers, tomatoes, celery, onions, mushrooms, bacon bits, deli ham, various cheeses, olives, pickles, dried fruits, and just anything else we can find that sounds good in a salad. Never a small salad, simply by virtue of the number of ingredients we usually throw in it. Guaranteed to create several doggie bags!

Eggplant Parmesan: Fried eggplant strips, combined with a garlic-tomato-basil sauce and lots of cheese … then baked to a golden brown! A veggie-a-terrian alternative to our Chicken Parmesan.

Mushroom Stew: It tastes so meaty that it’s amazing … and there’s not a single scrap of meat in it! A creative stew made of a combination of dried and fresh mushrooms, balsamic vinegar, and various herbs … that’s sure to surprise and amaze you!

….and that’s all I can think of for right now. I’ve been writing for several hours at this point, but I’ve only really begun to scratch the surface of the dishes I can make with things I always have on-hand.
