Sloppy Joes: That classic American favorite, made Knox-style! Features ground beef, chopped onions, BBQ sauce (or ketchup) and mustard. Try it with a few forkfuls of homemade sugar-free pepper or pear relish thrown in, just to add that surprising hint of sweet in an otherwise savory treat. Served on a bun or toast, with cheese.

Italian Sausage with Peppers, Onions, and Mushrooms: Wrapped in a tortilla or just eaten with a fork, Lane’s homemade Italian sausage links are awesome fried up with onions, pepper strips and fat, juicy mushrooms. Available with a bit of tomato or a ton of cheese, on request.
Lasagna: Lane’s low-carb version of the classic Italian treat. Low-carb flour tortillas replace the traditional pasta sheets, layered with Lane’s home-canned spaghetti sauce and lots of mozzarella cheese. In season, fresh basil will be spotlighted.
Grilled Chicken Cordon Bleu: A diabetic’s delight! A juicy grilled chicken breast, topped with a smear of whole grain mustard and a slice of deli ham, with a slice of swiss cheese melted across the top. Eat it in a toasted whole-wheat sandwich, or just ask for a fork!
Toasted Bacon, Cheese and Tomato Sandwiches: Timothy’s not much on lettuce, but he’ll always take a slice of cheese instead. Our BCTs are quick to make using the bacon we can and make ourselves (see buckboard bacon), and you can make them extra-special by requesting the garlic-grilled bread.
Chicken/Turkey Noodle Soup: Quick and easy, made from our own slow-cooked, pressure-canned poultry stocks. Great any time, but especially during cold and allergy season. Try the Poultry and Veggie version, with lots of celery, onions, peppers, peas, carrots, and mushrooms … or request the classic Poultry and Noodle version: just lots of hot broth, tender meat and fresh-cooked noodles, sure to soothe the sorest throat.
Fried-onion-coated Oven-fried Chicken Breasts: A Favorite! Boneless/skinless chicken breasts, dipped in ranch dressing, and encrusted with canned French Fried Onions. Bake till golden. Be sure to ask for your complimentary drool bucket

Green Bean Casserole Delux: Be prepared to drool. I take the classic Green Bean Casserole recipe … and double the amount of onions the normal recipe calls for. I make it with whipping cream instead of milk, and then I add a bunch of bacon bits. This would taste good on a bumper. Even a dirty bumper.
Homemade Breakfast Sausage: We make our own sausage here at home, and our breakfast sausage can’t be beat! Lean and flavorful, this makes a great side for breakfast, a different but yummy burger, or an excellent filler for one of Lane’s Homemade English Muffins!
Canned Bacon for Breakfast or Sandwiches: Always available at Lane’s24-Hour Diner! Our canned bacon cooks up quick and crispy. Use it as a breakfast side, a sandwich add-on, or as a sandwich itself. It’s ALWAYS available.
Homemade English Muffins: One of the best things on this menu! Lane makes her English muffins from scratch. They start with a soft yeast dough made from fresh-ground whole wheat flour and home-rendered fat … and finish up as a soft, steaming, flavorful muffin that will make you never want one of those hard things out of a grocery store … ever again. Try your English Muffin with Lane’s Homemade Breakfast Sausage, Canned Bacon, eggs, a simple smear of butter, or one of Lane’s wide variety of homemade sugar-free or no-sugar-added jellies, jams, and preserves.
Pancakes: A favorite everywhere, but especially here! Daily varieties include buttermilk, blueberry, walnut, chocolate chip, whole wheat, and banana nut … with more coming every day. Fresh Scones: Another specialty here at Lane’s 24-Hour Diner! Made Fresh to order! Your scone choices include one or more of the following: dried blueberries, cherries, cranberries, figs, apricots, peaches, and pineapple; crystallized ginger, dried orange peel, candied orange peel, and candied tangerine peel; English walnuts, almonds, pecans, hazelnuts, or black walnuts; chocolate chips (regular and sugar-free), white chocolate chips, butterscotch chips, and toffee chips; various spices and flavorings. If you don’t see what you want, just ask!

Super Supper Salad: We start with fresh spinach leaves, and unload the fridge and pantry from there! Bell peppers, tomatoes, celery, onions, mushrooms, bacon bits, deli ham, various cheeses, olives, pickles, dried fruits, and just anything else we can find that sounds good in a salad. Never a small salad, simply by virtue of the number of ingredients we usually throw in it. Guaranteed to create several doggie bags!
Eggplant Parmesan: Fried eggplant strips, combined with a garlic-tomato-basil sauce and lots of cheese … then baked to a golden brown! A veggie-a-terrian alternative to our Chicken Parmesan.
Mushroom Stew: It tastes so meaty that it’s amazing … and there’s not a single scrap of meat in it! A creative stew made of a combination of dried and fresh mushrooms, balsamic vinegar, and various herbs … that’s sure to surprise and amaze you!
….and that’s all I can think of for right now. I’ve been writing for several hours at this point, but I’ve only really begun to scratch the surface of the dishes I can make with things I always have on-hand.
